Whole Vermont Grass-Fed Yearling/Mutton
Our sheep are 100% grass-fed and raised here on our Vermont farm, where they graze on completely chemical free pastures. Our sheep breeds are Vermont Icelandic, Scottish Blackface, and Gotland. All of these breeds, even as mutton, have mild flavored, fine textured meat that is highly praised by gourmet chefs around the world.
When you buy a yearling/mutton, you are buying the live animal, which we will care for and raise on our farm until slaughter in late October or early November. At that point, we hire an itinerant butcher on your behalf and they humanely dispatch and prepare the carcass for butcher, which then is taken to a local USDA inspected butcher facility for cutting, wrapping, and freezing.
We will contact you to let you know when the butcher will have your mutton cuts ready for pickup.
Once your sheep is slaughtered, you can expect to receive about 32–42 pounds of individually wrapped cuts for your freezer. You can expect to get a variety of cuts including ribs, chops, legs, shanks, and ground.
Please note: we are unable to store your mutton cuts so you will need to pick up the day it is ready from the butcher.
